This is from yesterday. We went out to Nagoya in Naperville to celebrate Mother's Day. If you love sushi or stir fry, it's definitely the place to go. Excellent food and even better company.

Cookbook Review - The Vegetarian Slow Cooker: Over 200 Delicious Recipes By Judith Finlayson
I was so excited when I was contacted about reviewing Judith Finlayson's new book, The Vegetarian Slow Cooker: Over 200 Delicious Recipes.
If you've read this blog, or my other blog, Lola's Victory Garden, you know how I'm always looking for new recipes to try to change up our meals at home. You don't need to be a vegetarian to enjoy an excellent vegetarian recipe. Sometimes it's nice to change things up and eat healthier, or maybe you want to cut down on the amount of meat you eat. Or maybe you're already a vegetarian. A Slow Cooker Cookbook with vegetarian recipes...how much easier could it be? And if you're a Vegan, many of the recipes are Vegan or can be made Vegan with some simple substitutions.
The book's 11 chapters are broken down into Bread and Breakfast, Starters and Snacks, Soups, Fondues and Savories, Mostly Veggies, Pastas and Grains; Beans, Lentils, Tempeh, and Tofu; Sides, and Desserts.
The recipes include the recipe title, a short description of the recipe, a detailed ingredients list with both US and metric measurements, step by step instructions, and lots of color photos.
This is the perfect cookbook to have on your shelf for some delicious, fabulous looking vegetarian dishes for your next dinner party or potluck. And because the recipes are for the Slow Cooker, they are excellent for those of us who don't want to spend a lot of time in the kitchen.
Looking through the cookbook I found so many recipes that are must tries. Classic French Onion Soup, Dum Phukt - Style Potatoes With Cauliflower (a delicious Indian dish), Cannelloni With Tomato Eggplant Sauce, Indian Peas And Beans, Lentil Shepherd's Pie...I could go on and on, there are just so many recipes I know I will be trying.

Equipment: Small (maximum 3.5 quart) slow cooker
Fondue Forks
Ingredients:
1 Can (28 oz/796 ml) tomatoes with juice
1 tsp Oregano
1 tsp Salt
1/4 tsp fresh ground Black Pepper
3 cups shredded Cheddar Cheese
Sliced Baguette
Celery Sticks
Sliced Green Pepper
1. In a food processor bowl, or blender, process tomatoes with juice until relatively smooth. Transfer to Slow Cooker Stoneware. Add Oregano, Salt, Black Pepper and cook on high for 1 hour, until tomatoes are hot and bubbly.
2. Add cheese to Slow Cooker in handfuls, stirring to combine after each addition. Reduce heat to low and serve or cover and keep on low until ready to serve.
