Day 381, 382 of Sheltering In-Waiting

UPDATE:
I heard from the PR person, he sent me a review copy of the book. I started reading it tonight, but have stopped for the night. It’s a bit of an interactive book, asking you to find photos of your beloved pet(s) who died and journal along. My project Friday will be to dig up some photos of my beloved pets who crossed the rainbow bridge.

I can interview Reagan Pasternak via email or phone. I am leaning towards email. If you have any questions for her, please leave them in the comments.

~I got an email today asking if I would like to interview Reagan J. Pasternak, actress and author. In case the name is not familiar to you, she was in HBO’s “Sharp Objects”, Syfy and Netflix “Wynonna Earp”, HBO’s “Being Erica”, and BET’s “Ms. Pat”. She is also author of the just released “Griffin’s Heart”. It’s part memoir, part guide for grieving a pet.

I don’t know what to do! I don’t remember actually doing any phone interviews. I’ve submitted interview questions via email before. Doing a phone interview would be a total fan freak out on my part. (I’m fanning myself right now.)

It would be so awesome to get back to doing book reviews here.

I’ll let y’all know what I hear back on this.

Ok, Wednesday, Thursday. I had my deposition preparation Wednesday and discovered they are missing records. They also didn’t send me documents to review (not my first rodeo). So the deposition on Thursday was canceled and to be rescheduled after the records are requested and received.

It was nice to have the break today. I did not sleep much with everything I was anticipating today. My wife and both kids accompanied me to Sam’s Club. I think I’d gone once in the early days of the pandemic. My kids may be 20 somethings, but it was like trying to wrangle toddlers. They were all over the place! Props to the customer who held the family restroom door open (ladies-closed for cleaning). I wore cargo shorts today so my HUGE knee brace was clearly visible. Tomorrow and Saturday PT.

Day 380 of Sheltering In-Waiting

Monday, Tuesday. Monday was PT. I woke up with horrible knee pain. I powered through, but my knee let go when I was side stepping, fortunately, that is done between parallel bars. I did 7 out of 10 and skipped the slant board, which I could have done, but my therapist said “that’s it, let’s get you some ice.” 🤷🏻‍♀️ 

Tuesday was my daughter’s staffing for the group home. That was 35 minutes I can’t get back. Total WOT. Then...let’s just say it got very stressful at home. Then it started again at midnight. 🤷🏻‍♀️

Still doing the countdown because we are not even near the normal before the pandemic.

Day 378, 379 of Sheltering In Happy 28th Birthday to my daughter


Happy Birthday to my daughter who turned 28 years old today! She requested we celebrate her birthday first, before we celebrated Easter. Since Easter dinner isn’t quite ready, we gave in. 

I also forgot to put together the Easter baskets, which ended up being gallon ziplock bags. 🤷🏻‍♀️ I went to Dollar Tree yesterday and looked for those plastic containers for organizing, but the location I went to no longer sells them. I figured I could use those as Easter baskets and then give them to my daughter for organizing when she moves into her apartment. I can’t believe they didn’t have any! I think it may be because they seemed to expand the grocery section.

Ok, happy birthday has been done.

3. If you are alone for the evening, what do you fix yourself for dinner?
If it’s only me, I’ll make an omelette with whatever fresh or frozen vegetables I have, top with shredded cheese and serve with salsa. 
4. What make was your first car?
Pontiac.
5. What is your height?
5’6”.
6. What was your least favorite toy as a child?
The Mod doll I got for Christmas the first Christmas my Dad wasn’t working because he had back surgery. My sister and I both wanted Barbie dolls. The Mod doll was an inexpensive alternative. The arms and legs didn’t bend and she wasn’t as attractive as Barbie. It was what my Mom could afford. One Mod doll each, and a Monopoly game we shared. My sister and I didn’t understand. I think we were 6 and 7 years old.
7. What’s your favorite cartoon character?
When I was a kid, Roadrunner was my favorite.
8. What’s your dream car?
When I was a teen, my dream car was a Pontiac Trans Am.
9. What’s your favorite pizza topping?
Black olives.
10. What’s your favorite sports team?
Chicago Cubs.
11. What’s your favorite TV show?
I’m waiting on the last season to be available, The Ozarks.
12. What is your favorite ice cream?
Pistachio.
13. What is your favorite song?
Fleetwood Mac, Landslide or just about anything from the Rumours album.
14. What’s your least favorite chore?
Washing dishes by hand.
15. What was your first job?
I worked at a Midas Muffler that had gas pumps. My job was cashier in the booth (smaller than a Fotomat). In the summer I roasted, in the winter I froze. There were 2 space heaters, but the booth was thin glass on the top 1/2 and thin metal on the bottom 1/2. Every shift in the winter I was bundled up completely. Regular socks, thick wool socks, snowmobile boots, long johns, sweatpants, heavy jeans, thermal shirt, tshirt, flannel shirt, down vest, and a heavy parka. I could barely move, but I was as warm as I could be out in that booth. On the weekends I brought my small tv so I could watch baseball or football. I went to college full time and worked full time. I was allowed to do my homework while I worked, so other than roasting or freezing, it was the perfect job for me at the time.

Day 371-377 of Sheltering In

Saturday to Friday. We did not make a surprise visit at my father-in-law’s for his nasty wife’s birthday party. We weren’t invited as we have been in the past. My father-in-law wanted us there because he basically wanted back-up. Her family is always stealing his tools and my brother-in-law’s tools, so they wanted more “eyes”. We weren’t “officially” invited, so once we found out what the event was, we didn’t want to go. Sunday I had “my time” only for a few hours because my son wasn’t getting along with my wife. I told him to come hang out with me.

The weekdays were filled with PT appointments and my wife and son got the first of the 2 shot COVID-19 vaccine. Wednesday after PT I picked my daughter up from her group home for Easter/her 28th birthday. That girl has not stopped talking! And she’s talking so fast. Breathe girl!

Friday we are at my father-in-law’s doing laundry and having lunch. I have an awful headache. He is hard of hearing and ALWAYS has the tv volume up as high as it goes. When will I learn to bring earplugs? I do have them.

I have been so swamped with appointments and the pain aftermath that I didn’t get my daughter’s birthday gift. I have no idea what to get her. My son got her our village’s version of Monopoly. I’m really going to have to think. Maybe my wife and I can escape Saturday and go shop for something. Ideas?

1. How often do you make food and eat it?
My spouse usually cooks because she doesn’t have as many pain issues as I do. I will sit and prep vegetables, and sometimes I will make takeout from scratch. Char Siu, egg foo young, beef and broccoli, Kung Pao Chicken. I’ll also make eggplant pizza rounds, eggplant Parmesan layered and prepared as if it were lasagna (no pasta). I got lazy during Christmas break and made tamale pie instead of tamales. So much faster, same ingredients, tastes the same. I will admit since the torn meniscus and sprained LCL, I haven’t done anything that necessitates standing at the stove. Anything my wife can cook in the oven I will sit and prep it.

2. Do you consider toasting bread, preparing instant noodles, or boiling an egg to be cooking? Why or why not?
It’s still food...and it’s being changed from an uncooked state to a cooked state, so why not? Besides, you can fancy anything up. Toasted bread becomes a BLT. Instant noodles become Pho, and a hard boiled egg can become egg salad, or deviled eggs.

3. What’s your favorite dish to make?
I really like my eggplant Parmesan lasagna. I rarely, just about never, eat real pasta. (NO zoodles!) I also make 
Eggplant Rotolo. The recipe is from my blog Lola’s Victory Garden which I haven’t posted on in ages, but my recipe is still there.

4. Cooking or baking: what’s more fun? What’s more difficult?
I don’t bake much anymore. I will be making Pineapple Upside Down Cake for Easter or my kids will hate me. It’s a tradition from their Great Grandmother. Since I’m diabetic, I don’t bake much because if it’s around I will eat it. I can’t stand fake, artificial sweeteners and I will not use them. I use sugar, honey, or real maple syrup in recipes. Cooking is more fun because there are so many recipes, and they are easier to make low carb than baked goods. Also, it’s easier to screw up when baking. If you don’t use the correct, and/or proper amount of a leavening agent (yeast, baking powder, baking soda) you are not going to get the desired result.

5. Who did most of the cooking in your house when you were growing up?
My Mom cooked in the house, my Dad was the grill master. After my Mom passed away, my Dad became famous for Steak and Nothing. Just a really big steak with nothing else. Every Father’s Day we have Steak and Nothing in honor of him. My kids start asking about it in early April. (It gets to be obnoxious how many times they ask well in advance.)

6. How have you learned the cooking skills that you have?
I learned many things from my Mom, but she grew up in the depression and we hit some hard times when my Dad had his back surgeries, so there was a lot of starches because they stretched a meal. A lot of pasta and rice. I also have a lot of cookbooks and my Pinterest account is full of saved recipes. I’ve also watched a lot of cooking shows.

7. Have you ever taken a cooking course? If so, what did you learn? If not, would you like to do one? What would you like to learn?
When I was a kid in 4-H my Mom taught a cooking class. I also took Home Economics in High School. Other than those, I really don’t have an interest in taking a class. 

8. Have you tried cooking food from another culture? What did you prepare? How was it?
I’ve made:  
Indian-Butter Chicken, Aloo Gobi, Chicken Tikka Masala, Samosas, Saag Paneer, Chicken Curry; Chinese-Char Siu, Beef & Broccoli, Kung Pao Chicken, Sweet & Sour Chicken, Crab Rangoon, Egg Rolls, Shrimp Lo Mein, Moo Shu Pork, Shrimp Fried Rice, Beef Chop Suey, Cuban-Ham Croquettes, Cuban sandwiches, Fried Plantains; Mexican-Tacos, Burritos, Wet Burritos, Enchiladas, Red Snapper Veracruz, Quesadillas, Tomatillo Salsa; Italian-Pasta from scratch, Ravioli from scratch, Sauce from scratch, Bracciole, Sicilian Steak, Mussels in Red Sauce, Arancini, Meatballs, Chicken Parmigiana, Fettuccine Alfredo, Pizza Dough, Calzones; Greek-Greek Chicken, Greek Lemon Potatoes; Thai-Fried Tofu, Chicken Pad Thai; and many more dishes. Everything has tasted good. I don’t think I’ve ever had a recipe fail, but then I spend forever studying Pinterest recipes to select the best recipe for a dish I want to make.

9. Is it cost-effective to do your own cooking? Can you save money by cooking?

I save a lot of money cooking at home. Even with expensive ingredients, it’s still so much cheaper than a restaurant. No ill behaved children (now they are ill behaved adults lol!). You know exactly how fresh everything is, and there is no waiter that has to be tipped. 

10. Would you rather do the cooking or do the washing up afterwards?
Cooking!  These people that say wash dishes as you go? Bwah hahahahaha! Seriously?

11. Do you use recipes to cook? If so, where do you get the best recipes? Do you get them from friends, family, online, or from cookbooks?
The recipes that are my Mom’s, that I created myself, or that I cook often, I don’t need to to look up the recipe. I have lots of cookbooks, I use Pinterest, and I also clip recipes and put them in one of those photo albums that has the plastic you peel apart to stick photos in.

12. Have you ever tried to prepare some food and just totally ruined it? What happened?
I’ve made Split Pea Soup and someone thought they were being helpful, turned the flame up, causing the bottom of the pan to burn. The smell! There is no way to save it when that happens.

13. Do you prefer cooking at home or eating out at a restaurant? Why?
Right now, cook at home. I am not eating IN a restaurant for the foreseeable future. I do wish I had an upright freezer so I could cook extra and freeze entire meals. Then I wouldn’t have to buy those salty frozen dinners from the grocery store when no one feels like cooking.

14. Is cooking a social activity for you? Do you like to do it with other people, or do your prefer to do it alone?
I’d rather cook alone. I might ask for an ingredient to be found, but otherwise, I don’t want the distraction.

15. Do you have a lot of cooking equipment? How often do you use it all? Do you have any pieces of equipment that you rarely ever use?
I have a ton of cooking equipment. The one thing I don’t have, that I don’t want is that sous vide thing. I don’t see the need for it, and I don’t understand it. I’ve got just about everything else, so I don’t see why I’d need it.

Day 370 of Sheltering In

Friday. Found out what the deal was at my father-in-law’s with all the grills and coolers. It’s a birthday party for his 2nd wife. (I specify 2nd wife so there is no confusion. She is NOT my wife’s mother. This woman is nasty. She had RBF in every photo she was in at our wedding.) Not that I give a flip, but we’ve been invited to her past birthday parties. I’m actually glad we weren’t invited, because we don’t have to decline the invite or face questioning. 👏 

I woke up with my back screaming. I must have kicked the blanket off and exposed my back to the cool air. That’s never good. I still went to PT and the only thing I skipped was the step thing. L foot step up, R foot step up, then L foot step down, R foot step down. Rinse and repeat. I also did an extra minute on the step bike. Way to get M all excited! 😂 

The book I mentioned yesterday? Nope. Not what I expected. There is little mention of diagnosis’s, so it’s useless for the reason I had bought it ($1.49). It’s definitely interesting. It’s more about a psych ER doctor’s experiences from residency to doctor. At first it was very descriptive of the patients she was seeing, then it just veered off into what the shifts are like and what goes through this psych ER doctor’s mind as she does rounds on all the various sections of the hospital. I will likely finish the book, but I’m no longer in a rush because I won’t be passing it on to my wife. So the search continues.

I finally talked to my wife and figured out a date for my daughter’s home visit. We will pick her up on the 31st. Of course now my daughter can’t stop talking about it.
